While building his Grange des Prés estate from 1587 onwards, Henri de Montmorency began gathering land halfway between Pézenas and Caux to create a park for forest animals, i.e. an enclosure reserved for hunting. The duke quickly had the whole area walled off. He planted coppice woods, stocked the property with all kinds of game and built a small pavilion. The estate then passed into the hands of the Prince de Conti, then in the 19th century to the family of the famous organ builder Jean-François l?Epine.
