The age of the vines varies from 20 to 40 years. The winegrowers are attached to the preservation of the ecosystems (hedges, groves, slopes) which participates in the safeguarding of the biodiversity and the stimulation of the natural defenses of their vineyard.
A lot of care and requirement are brought to the culture of the vines with a constant respect of the environment and the soil, without chemical products nor insecticides. The grapes are harvested by hand and the vinification methods are natural.
Wines neither fined nor filtered. The winegrowers seek the best phenolic maturity and limit extraction to express freshness, finesse and respect the typicity of the particular terroir of Pézenas.
